These pancakes are fast to make, sweet & healthy and perfect for breakfast or snack during the day or evening. There are many good reasons to make banana-berry pancakes, and that’s why they have become super popular in our family. Here’s my latest SaimaaLife recipe!

Making this pancake recipe video was fun (as always) but please excuse my English in the video. It was just one of those days when thinking and speaking clearly did not seem to work – not even in Finnish. 😉

Recipe for SaimaaLife Banana-Berry Pancakes

This recipe makes for 1 pancake

  • 1 banana
  • 1 egg
  • 1 tbsp oatmeals
  • 1-2 tsp berry powder of your choice (check out some links in the bottom of this post for best berry powder online shops!)
  • dash of cinnamon

NOTE! If you don’t have berry powders, just use cinnamon. Or if you are out of cinnamon, berry powder adds flavor nicely by itself, too. Feel free to improvise with spices!

  • Coconut oil (or other oil/butter of your choice – I personally like the coconut flavor in pancakes)

1. Just mix the ingredients and blend until smooth.

2. Pour dough on a pre-heated pan and fry in oil/butter slowly in medium heat.

Turning the pancake can be tricky. You can cut the pancake in two halves or four pieces and turn one piece at a time.

Banana-berry pancakes may not be the prettiest pancakes, but you can ignore the looks because they are so delicious. Maybe even more delicious than SaimaaLife carrot pancakes.

Enjoy the pancakes as is or with Turkish / Greek yoghurt and sprinkle some berry powder on top.

This time I made the pancake portion to coincide with my luxurious “me time” moment so that I could enjoy it while reading a women’s magazine.

If you haven’t used berry powders before, I warmly recommend trying them.

A teaspoon of berry powder is equal to a handful of fresh berries = Lots of vitamins and fibers!

Our family loves berry powders for example in porridge and smoothies.
